‘Total Fruit and Swallow Factor’ is a concept whose aim is to help the consumers’ with their sensory perception when choosing a wine. The fruit becomes the protagonist because not only are we talking about the aroma but also a constructive element capable of giving the wine volume, structure and length in the mouth. It is also to do with the acceptance factor given that it has no elements which cause rejection: no bitter tastes, tonicity or too much acidity, but does have sensations communicating acceptation such as the domination of the fruit and sweetness.
